1. In a food processor, combine 1 can of rinsed and drained chickpeas, 3 cups fresh cilantro leaves, 1 chopped garlic clove, and 1 roughly chopped avocado. process until finely chopped.
2. With machine running, add 3 tbsp olive oil in a slow, steady stream.
3. Then add 1 tsp lemon juice, and then water, 1 tablespoon at a time, until mixture is smooth.
4. Season to taste with salt and black pepper and serve with lemon wedges and tortilla chips.
