A vegan light savoury snack hailing from Gujarat, made up of chickpea flour, methi, flavoured spices and topped with mustard seeds.

Instructions

1. Bring all ingredients (cup wheat aata, 1/2 cup roasted rava, 1/4 cup besan, 1 tea spoon jeera, 15 big pods garlic crushed or grated, 1 inch ginger grated, haldi, chilli, heeng powder all 1/4th teaspoon, 8-9 green chili paste, 2 tea spoons fresh lime juice, salt to taste, 2 tea spoons sugar, 1/4th cup coriander, 4-5 tablespoons of oil ( oil is a must else muthiya will turn out to be rock solid and not soft) together in a deep bowl and gently mix with your hand. you’ll see the texture as mildly soft and smooth.

2. Now very slowly add the bottle gourd (squeeze and remove the water from it and keep in a cup) )and onion water (1/2 small grated onion - squeeze and remove the water from it) spoon by spoon and make your dough ready. your dough should not be like roti dough and it should also not be like idli batter. this is semi thick like slime which kids play with.

3. Once your dough comes together, leave it to set for 10-15 mins. then gently knead again for just a min with some oil on your hands.

4. Now you take dough portions the size of a normal onion or potato and make them gently into oval cylindrical shape and put them in the steamer.

5. Put enough water in the steamer and let it steam for 45 mins. do not open the steamer to see them as if the steam leaves they’ll just go flat and not be soft. if you want to try then first try with a small portion and see before making all of them.

6. After steaming, make pieces and make a nice tadka with mustard seeds, urad dal, curry leaves and sesame seeds. sesame seeds are a must in this dish. let them roast for 2 mins on slow flame so they get a tad bit crispy as per your liking. sprinkle little sugar and lime juice and it’s ready.

Tip

You can replace bottle gourd with spinach, methi, oats you can add in this, millets you can add as powder and bajra aata also you can put. the recipe remains the same just the ingredient can change.
