A traditional dish of Guajarati cuisine generally prepared with dals and wheat flour as base ingredients. It has soft textured dhokli submerged in semi thick dal like lentil gravy and has mild sweet and spicy taste of aromatic spices and crunchy peanuts.

Ingredients

toor dal
water
oil
peanut
ghee
mustard seed
cumin seed
dried red chilli
asafoetida
curry leaves
tomato
ginger garlic paste
turmeric powder
kashmiri red chilli powder
cumin powder
coriander powder
garam masala powder
jaggery
salt
lemon
coriander leaves
wheat flour
carom seed

Instructions

For dal

1. Firstly, in a cooker take 1/2 cup rinsed toor dal, 1.5 cups water and 1 tsp oil.

2. In a small bowl keep 2 tbsp peanuts.

3. Pressure cook for 5 whistles or until the dal is cooked well.

4. Take off the boiled peanuts from the cooker and keep aside.

5. Whisk and mash the dal to smooth consistency.

6. In a large kadai, heat 1 tsp ghee and add 1 tsp mustard seeds, 1/2 tsp cumin seeds,1 broken dried red chilli, a pinch of hing/ asafoetida, few curry leaves. let them splutter.

7. Further add 1 finely chopped tomato, 1 tsp ginger garlic paste and saute until tomatoes turn soft and mushy.

8. Add in the cooked dal, 1.5 cups water and mix well adjusting the consistency as required.

9. Also add 1/4 tsp turmeric powder, 3/4 tsp kashmiri red chilli powder, 1/4 tsp cumin powder, 1/2 tsp coriander powder and 1/4 tsp garam masala powder. combine well making sure all the spices are mixed well.

10. Additionally, add cooked peanuts, small piece of jaggery, 3/4 tsp salt and 1 tsp lemon juice. stir and keep aside until the dhokli is prepared.

For dhokli

11. In a large mixing bowl, take 1 cup wheat flour, 1/4 tsp turmeric powder, 1/2 tsp kashmiri red chilli powder, 1/4 tsp ajwain, 1/2 tsp salt and 2 tsp oil. combine well until the spices are well combined.

12. Further, add 1/2 cup water and knead the dough. knead to smooth and soft dough.

13. Take a ball sized dough, dust with wheat flour. roll to slightly thick consistency dusting wheat flour if required.

14. Cut into diamond shapes or size of your choice.

For dal dhokli

15. Once the dal comes to a boil, drop in dhokli pieces and give it a good mix.

16. Cover and boil for 10-15 minutes or until dhokli is cooked completely.

17. Finally, add 2 tbsp coriander leaves and enjoy dal dhokli with hot steamed rice.
